LIMA BEANS


Native to tropical America, and called Lima because that is where the original seeds came from, these beans are sometimes called 'the aristocrat of the bean family'. They are rather like butter beans in appearance and are indeed referred to as butter beans in the southern USA. They have a lovely sweet flavour on account of their high sugar content. Unfortunately they are not easy to obtain in this country.

Cooling thermal nature; sweet flavor; beneficial to the liver and lungs; beautifies the skin; increases yin fluids; highly alkalizing (equal to soybeans in alkalinity); neutralizes acidic conditions such as often arise from excessive meat and refined-food consumption. One of the best beans for most Americans.

Also known as the "butter" or "sieva" bean, it is a relatively new member of the kidney bean family. Thriving in warm climates, limas are a favorite in South America. Starchier and less fatty than most other beans.

We eat beans everyday in Brasil (or almost everyday). I'm seriously thinking of going back to vegetarianism, so I have to recharge my love for the lil' lovely beans.

If you are that interested I can get it for you....but basically you mash the beans to a pulp after cooking them...add your favorite herbs and spices and dip away!
