Does anyone know a good recipe for banana cake? I bought about 20 bananas for £1 and now I need to do something with them before they go bad!
Yes, I know I can Google search, but I'd rather try a recipe you know well and love. Cheers. :-)

on 2008-03-12 05:03 pm (UTC)Our recipe was a bit ad-hoc but went something like this:
Cream 4oz sugar with 4oz butter
Add 2 eggs and mix
Stir in 2oz flour, and 4 over ripe bananas, peeled and mashed.
1sp baking soda.
Chop up some walnuts and add them too.
Stick in the oven for about 30 mins and take out to cool.
Make icing using icing sugar and warm water and spread over the top.
Guzzle while warm :)

add an egg, 5 tbsp of milk and some vanilla (flavour or sugar)
mix in a separate bowl first: 2 cups of flour, 1 tsp of baking powder and 1/2 tsp of salt.
mix all together and add four (or so) ripe bananas.
bake for an hour at 175°.
(I like to mix half of the dough with the bananas and the other half with cocoa powder, than layer it, more or less, into a casserole dish and bake, that's really nice.)
